It's the Cumbernauld Gordon Ramsay again!

Just made the-best-dinner-ever! It's a version of Soubise sauce over pasta. Variations include leaving out the cheese and adding nutmeg and pouring over baked cauliflower.

This sauce is not healthy but tastes so good it's worth it.

This makes several meals worth of sauce. It's also vegetarian. No really - stop laughing!

2 kilos of frozen onions.
2 garlic cloves, mashed.
Half a pack of butter (approx 150g).
Large glass of white wine.
Stock of your choice (I used the little jelly like, concentrated pots of vegetable stock).
500 to 600 ml of cream.
Salt and pepper.
Cheese - whatever and however much you like, I used 350g of mature white cheddar.
Parsley to taste.
Defibrillator for the aftermath

Melt the butter on a low heat and add the onions and garlic. Fry until soft and most of the liquid is reduced. Let them brown just a little if you if you want a sweeter sauce.

Add your stock, wine, 3/4 of the parsely, salt and pepper and let reduce again.

Add cream, let it start to bubble then blitz with a hand blender or let it cool a bit and put in a food processor/blender. Add the rest of your parsley.

Return to the heat and melt in the cheese.

Pour over food of your choice
