The continuing adventures of a gastronaut - Vegan tomato soup

This soup takes about 20 minutes to make and is seriously good, cheap to make, healthy and can be used as a base for more flavours or even pasta.

  1. Fry some onion and garlic in olive oil until soft then add herbs of your choice.
  2. Add 2 cans of tomatoes and heat through.
  3. Take off the heat and (using an empty tomato can) add 2 cans of cold water.
  4. Place in a blender with a slice of white bread and 60ml of olive oil (use virgin olive oil for a peppery taste). Blend until smooth (about 5 mins or longer if using a hand blender).

I keep jars of red pepper paste, roasted peppers and chillies in the fridge. I add these for a bit of variety along with smoked paprika (going for the umami flavour here)

If you don't want vegan, add some of your favourite sausage, bacon or whatever ex-animal you like best to the frying pan.

The blender emulsifies the oil and the bread acts as a stabiliser to stop it floating to the surface.
